APPLE CUSTARD PROTEIN BREAKFAST BAKE (GF/DF)
INGREDIENTS
- 2 tbsp almond meal
- 1 tbsp chia seeds
- 1 scoop (30g) Vanilla Vegan Protein Powder
- 1/2 tsp baking powder
- 1/4 tsp cinnamon
- Pinch of salt
- 1/4 cup almond milk
- 1/2 banana
- 1/2 tbsp pure maple syrup
- 1/2 apple, chopped
- 1 tbsp custard (I used vegan)
METHOD
- Preheat oven to 180 degrees fan-forced.
- Add all the ingredients, except apple and custard, to the blender and blender until smooth.
- Stir through chopped apple.
- Spoon half the mixture into a greased baking ramekin.
- Top with custard and then cover with remaining mixture.
- Place in the oven to bake for 20-22 minutes, or until golden.
- Serve immediately
