LEMON BLUEBERRY DUTCH BABY
INGREDIENTSĀ
- 1 cup flour
- 1/4 cup Happy Way Flavorless Protein Powder
- 1Ā tbspĀ sugar
- 1 tsp salt
- 4 eggs
- 1 cup whole milk
- 1 tsp lemon zest
- 1 tsp vanilla extract
- 5Ā tbspĀ melted butter (divided)
- 1 1/2 cups blueberries
- Powdered sugar for topping
METHOD
- Preheat oven to 220Ā°C with cast iron skillet inside
- In a blender, add flour, protein powder, sugar, eggs, salt, milk, 2 TBSP melted butter, lemon zest and vanilla. Pulse until smooth (liquid will be thin)
- Carefully remove hot Dutch Oven and melt 3Ā tbsp of butter. Add blueberries and pour batter over top. Place back into the oven for 18-20 minutes until itās risen and golden brown.
- Sprinkle with powdered sugar and drizzle with maple syrup or honey. Enjoy!
