INGREDIENTSĀ 

  • 1 cup flour
  • 1/4 cup Happy Way Flavorless Protein Powder
  • 1Ā tbspĀ sugar
  • 1 tsp salt
  • 4 eggs
  • 1 cup whole milk
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • 5Ā tbspĀ melted butter (divided)
  • 1 1/2 cups blueberries
  • Powdered sugar for topping


METHOD

  1. Preheat oven to 220Ā°C with cast iron skillet inside
  2. In a blender, add flour, protein powder, sugar, eggs, salt, milk, 2 TBSP melted butter, lemon zest and vanilla. Pulse until smooth (liquid will be thin)
  3. Carefully remove hot Dutch Oven and melt 3Ā tbsp of butter. Add blueberries and pour batter over top. Place back into the oven for 18-20 minutes until itā€™s risen and golden brown.
  4. Sprinkle with powdered sugar and drizzle with maple syrup or honey. Enjoy!
