INGREDIENTS 

  • 1 cup flour
  • 1/4 cup Happy Way Flavorless Protein Powder
  • 1 tbsp sugar
  • 1 tsp salt
  • 4 eggs
  • 1 cup whole milk
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • 5 tbsp melted butter (divided)
  • 1 1/2 cups blueberries
  • Powdered sugar for topping


METHOD

  1. Preheat oven to 220°C with cast iron skillet inside
  2. In a blender, add flour, protein powder, sugar, eggs, salt, milk, 2 TBSP melted butter, lemon zest and vanilla. Pulse until smooth (liquid will be thin)
  3. Carefully remove hot Dutch Oven and melt 3 tbsp of butter. Add blueberries and pour batter over top. Place back into the oven for 18-20 minutes until it’s risen and golden brown.
  4. Sprinkle with powdered sugar and drizzle with maple syrup or honey. Enjoy!
