MARRY ME PROTEIN COOKIE
INGREDIENTS
- 1 tbsp ground flax + 3 tbsp water
- 1/4 cup coconut oil (or butter)
- 1/4 cup almond butter
- 1/2 cup brown sugar
- 1/4 cup coconut sugar
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1 cup oat flour
- 1/3 cup Happy Way Vegan Vanilla Protein Powder
- 1/3 cup almond meal
- 1/2 Dark chocolate chips
- Flakey salt to serve
METHOD

Preheat oven to 175°C.

Combine flaxseed and water in a bowl and set aside.

Place oil, almond butter and sugars into a large bowl and mix until well combined.

Add in the flaxseed mixture, vanilla, baking powder, flours and protein and beat until a sticky dough forms.

Add in the choc chips, roll the mixture into balls and place onto a tray.

Bake for 12-14 minutes or until the edges are golden.

Sprinkle with salt and enjoy!
