INGREDIENTS 

  • 1 tbsp ground flax + 3 tbsp water
  • 1/4 cup coconut oil (or butter)
  • 1/4 cup almond butter
  • 1/2 cup brown sugar
  • 1/4 cup coconut sugar
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 cup oat flour
  • 1/3 cup Happy Way Vegan Vanilla Protein Powder
  • 1/3 cup almond meal
  • 1/2 Dark chocolate chips 
  • Flakey salt to serve

METHOD

  1. Preheat oven to 175°C. 

  2. Combine flaxseed and water in a bowl and set aside. 

  3. Place oil, almond butter and sugars into a large bowl and mix until well combined.

  4. Add in the flaxseed mixture,  vanilla, baking powder, flours and protein and beat until a sticky dough forms. 

  5. Add in the choc chips, roll the mixture into balls and place onto a tray. 

  6. Bake for 12-14 minutes or until the edges are golden. 

  7. Sprinkle with salt and enjoy!
