Protein Choc Mousse
- Place the chocolate in a heatproof bowl over a pan of gently simmering water (don't let the bowl touch the water). Stir until melted. Remove bowl from heat and set aside to cool slightly.
- Using a high-speed electric beater, beat eggs in a bowl until pale, doubled in size and fluffy. Carefully fold in the protein powder followed by the cooled melted chocolate
- Using a high-speed electric beater, beat coconut cream in a bowl until thick. Carefully fold into the chocolate mixture.
- Place mixture into cups or jars and put in the fridge to set for approximately 1 hour Enjoy!
