INGREDIENTS 

  • 1 1/2 cup oat flour
  • 2 eggs
  • 2 bananas, mashed 
  • 1/4 cup maple syrup
  • 1 cup blueberries, frozen  
  • 2 scoops (60 g) Happy Way Vanilla Whey Protein Powder
  • 1 tbsp vanilla extract
  • 1 tsp baking powder
  • 1 cup almond milk

METHOD

  1. Preheat oven to 180°C and line a muffin tray with muffin cases.⁠
  2. In a mixing bowl, add all ingredients (except blueberries) and mix well.⁠
  3. Gently fold the blueberries into the mixture. 
  4. Pour the mixture into the muffin cases.⁠
  5. Bake for 15-20 minutes or until golden—enjoy!
