INGREDIENTS

  • 1 1/2 cups spelt flour
  • 2 cups grated carrots
  • 1/2 cup sugar
  • 1/2 cup walnuts
  • 1/2 cup olive oil 

  • 1/2 cup applesauce
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • pinch of salt
  • 30g Vanilla Protein


METHOD

  1. In a large bowl, whisk together the carrots, sugar, eggs, oil, applesauce and vanilla.
  2. In a separate bowl, mix together the spelt flour, baking soda, baking powder, spices and salt.
  3. Pour the dry ingredients into the wet, and mix together until well incorporated. Add nuts.
  4. Pour the batter into a baking dish (cake or loaf tin). Bake for 40-45 minutes or until a knife comes out clean.
  5. Top with icing or enjoy with Greek yoghurt.
