SINGLE SERVE CARROT CAKE
INGREDIENTS
- 1/4c oat flour
- 1tbsp coconut sugar
- 1tbsp applesauce
- 3tbsp almond milk
- 1tbsp grated carrots
- 1/4tsp baking powder
- Pinch salt
FROSTING
- 3tbsp greek yogurt
- 1tbsp Like a Vegan Vanilla Protein Powder
- 1tsp maple syrup
METHOD
- Combine all ingredients except carrots. Then fold in carrots till just combined
- Transfer batter to a small greased ramekin
- Air fry at 325F for 7-8min and let cool 5min
- For frosting, combine all ingredients till smooth. Spread over top of cooled cake and enjoy!
